This breakfast casserole recipe can be prepared even faster by cooking the sausage the night before or eliminate it and add an extra cup of cheese and 2 more slices of bread. Salt at the table.
If you're serving this on the weekend and you have a few extra minutes, slice up some bananas or open a can of peaches as side dishes.
Pauper's Breakfast Casserole
1 lb pork sausage, cooked crumbled and drained 8 slices bread or toast, cubed 8 eggs 1/2 cup milk 1/4 tsp black pepper 1 tsp hot sauce 1/4 tsp Nutmeg 1 1/2 cups shredded cheddar or pepper-jack cheese
Preheat oven to 400°F.Sprinkle bread cubes into greased 13 X 9 X 2 baking dish. Sprinkle sausage over bread. Mix eggs, milk, hot sauce, nutmeg and pepper together and pour over sausage and bread cubes. Sprinkle with cheese. Bake uncovered for 15-20 minutes or until eggs are set and lightly brown. Serves 6.
